Rose Geranium Jelly
  

21/2 cups honey

3/4 cup water

6-7 washed rose geranium leaves (not sprayed!)

3 oz. fruit pectin

2 tbsp. lemon juice

Have a few sterilized jelly jars ready... Combine honey, water, and 2-3 leaves in a saucepan; quickly bring to a boil. Add pectin, stirring constantly, and bring back to a rolling boil. Remove the leaves with a strainer, add lemon juice, and remove from heat. In each jar, place a fresh leaf - pour in the hot jelly liquid and seal as you prefer. (The leaves will rise to the top of the container - if you seal them with the hot water pack method, you can turn them onto their sides before the jelly sets so that the leaf will show clearly along the side of the glass.)
