Lemon-Thyme Pound Cake
  

2 3/4 cups all-purpose flour

3 tbsps. chopped fresh thyme

1/2 tsp. baking soda

1/2 tsp. cinnamon or cardamom

1/2 tsp. salt

1 cup soft unsalted butter

2 cups sugar

1 tsp. lemon extract

6 eggs

1 cup plain yoghurt

1/4 cup lemon juice

2 tsps. lemon zest
  

GLAZE:

1/2 cup lemon juice

1/2 cup sugar

1 tbsp. chopped fresh thyme

Mix flour, thyme, soda, spice, and salt together. In a large bowl, beat butter, sugar, and extract until fluffy (3 minutes); beat in each egg separately. Combine yoghurt, juice, and zest together, then alternately beat in third portions of the flour and yoghurt mixtures. Pour batter into a greased and floured bundt or loaf pan and bake for 55 minutes at 350 degrees until tester comes out clean. Cool on a rack for 10 minutes, then remove from pan. 

In a small saucepan, combine glaze ingredients and heat on medium-high until the sugar dissolves, stirring all the while. Boil without stirring for another 10 minutes until syrupy, then strain out the thyme and cool for 5 minutes. Brush on cooled cake.
