Lemon-Almond Pesto
(a lemony basil and almond
sauce)
1/2 cup almonds
4 large cloves garlic
6 cups loosely packed fresh basil leaves
1 cup light olive oil
1/2 cup grated parmesan
6 tbsps. lemon juice
In a blender or food processor, finely chop the almonds.
Quarter the garlic cloves and blend them in, then add the
basil. On low speed, gradually add a thin stream of oil,
then the cheese and juice until just combined.
