Curried Apricot Chutney
2 cups water
2 cups chopped dried apricots
3/4 cups minced onions
1/4 cup sugar
1 1/2 cups vinegar
2 tsp. ginger powder
2 tsps. curry powder
1/4 tsp. cinnamon
1/2 tsp. salt
2 cups golden raisins
Combine the water, apricots, onions, and sugar in a
saucepan and simmer for 30 minutes. In a small saucepan,
combine the vinegar and seasonings and cook for 5 minutes;
then add in the raisins. Stir the two mixtures together and
ladle into sterilized pint jars. Process in a boiling water
bath for 10 minutes.
