Basil Jelly

  

2 packed cups fresh basil leaves

2 3/4 cups cold water

3 tbsps. lemon juice

31/2 cups sugar

3-oz. pkg. plus 2 tbsps. liquid pectin

Bring basil and water to a boil, lower heat to a simmer, cover and let steep 15 minutes. Ladle into a dampened jelly bag over a bowl and let it drip for about 2 hours... That should make about 2 cups - if not, add a little hot water to the bag and drip more in. Return to the pot and add the n juice and sugar - bring to a rolling boil. Add the pectin (and a drop of green food coloring, if you like) and boil, stirring constantly, for 1 minute. Skim off froth and pour into sterilized jelly glasses and seal. (It will set in about 24 hours.)
