2 cups moist orange peel (or grapefruit, lemon, or lime
peel)
lots of cold water
1 cup granulated sugar
powdered sugar
Grate outer rind very slightly to release the fragrant
oils. In a pot, cover with 1 1/2 cups of cold water and
bring slowly to a boil; then simmer for 10 minutes (or
longer, if you prefer a less bitter-tasting peel). Drain the
peel well... and repeat the process another 4 times.
Make a syrup of 1/2 cup water and the granulated sugar
(i.e., 1/4 cup water and 1/2 cup sugar per cup of fruit).
Put the peel in this and boil until the syrup is fully
absorbed - the peel will be transparent. Now roll the peel
in powdered sugar and spread it to dry thoroughly on baking
racks. Store it in tightly-covered containers.
(There are other ways to make candied citrus peel, but
simpler recipes result in fruit that doesn't keep nearly as
well.)
