8 oz. shredded cheddar cheese (or other flavorful, fatty
cheese of your choice)
4 oz. butter
6 tbsps. port (or brandy, or sherry)
seasoning to taste (pinch of cayenne? pepper? nutmeg?)
Have all the ingredients at room temperature - mash them
together, then stir the resulting paste until it’s smooth.
Press it into little containers and refrigerate.
