2 cups shredded coconut
1 cup mashed apricots (or other fruit of your choice)
5 eggs
2 tsps. salt
2 tsps. baking soda
4 cups flour
1 cup brown sugar
Combine the coconut with the fruit and eggs. Sift in the
flour, salt, and soda, mixing it in gradually. Mix in the
sugar, then let the batter rest for 20 minutes. Stir it
briefly and pour it into a greased loaf pan. Bake at 350
degrees for about 1 hour (test for doneness), then cool
before serving.
