the kernels from about 15 large ears of corn (or 9 cups
frozen kernels)
1 medium head of green cabbage, thinly shredded and
chopped
8 white onions, minced
6 green peppers, de-seeded and finely chopped
2 small fresh hot red peppers, if desired
2 tsps. each celery seed and mustard seed
2 qts. vinegar
1/4 cup salt
2 cups sugar
1 tbsp. dill weed
1/2 cup minced pimiento
Combine all ingredients in a large saucepan and bring to
a boil, then simmer for 35 minutes. Ladle into sterilized
pint or half-pint jars, leaving 1/4" space at the tops.
Seal and process in a boiling water bath for 15 minutes.
