(Coffee substitutes)
Dandelion Root "Coffee"
The dandelion roots should be gathered in the early
spring before the flowers bloom, or in mid-fall after the
blooming cycle. Scrub the roots under water with a stiff
brush. You’ll use the skinny ends for a coffee substitute
(the larger parts can be cooked as a root vegetable). Dry
these in the oven at 150 degrees until brittle, then roast
them at 375 degrees for 15-20 minutes until they’re dark
brown inside when you snap them apart. Grind them in a
blender or with a rolling pin. Stir in 1 tsp. per cup of
boiling water to make "coffee". (Avoid this brew
during pregnancy, as it is highly diuretic - normally very
good for you!)
