2 cups old-fashioned rolled oats
2 cups rolled wheat
1 cup grated coconut
2/3 cups wheat germ
1 cup chopped nuts
1 cup sunflower seeds
1/2 cup sesame seeds
2/3 cup honey
2/3 cup light oil
2 tsps. vanilla, if desired
1 tsp. cinnamon, if desired
2/3 cup dried fruit (chopped, if it starts out large!)
In a large bowl, mix together the oats, wheat, germ,
coconut, nuts, and seeds. Heat the honey, oil, vanilla, and
cinnamon - mix well and pour over the granola mixture,
stirring it all up to coat everything. Spread a couple of
cups of it in a shallow layer in a large baking pan (prepare
more than one, if you have them). Bake at 325 degrees for 25
minutes, being sure to stir the mixture up a few times
(check to make sure it doesn’t burn near the end). Repeat
for the remainder of the mixture, then pour all back into
your large bowl and mix in the dried fruit bits while it’s
still warm. Store in airtight containers.
