1/2 cup pine nuts
4 tsps. minced garlic
1/2 cup packed fresh basil leaves
1 cup rice vinegar
1 1/2 cups water
1 tsp. salt
2 tbsps. honey
Roast the pine nuts - the quickest way is in a skillet...
Heat a dry heavy skillet to medium hot, put the pine nuts in
it, shake the skillet every 30 seconds or so (or stir the
nuts) until they nuts are unevenly golden brown; remove them
from the pan. Blend or food process all of the ingredients
until smooth. Let the dressing set for several hours before
using.
