Glazed Mint Leaves
Pick fresh (organically grown!) mint leaves... Leave a
small stem attached to each separate leaf - wash them
thoroughly, then dry them, then put them in the refrigerator
on a cloth-covered tray.. Dissolve 1 cup sugar in1/2 cup of
water on low heat, and continue cooking until the syrup is
clear. Cool it slightly, then thoroughly blend in 4 tsps. of
powdered acacia (gum arabic - chill it first). Holding it by
the stem, dip each mint leaf into the sugar solution; then
gently spread it all around both sides of the leaf with your
finger... Slip it out between your fingers (to get some
solution onto the stem - anything uncoated will turn brown!)
onto a rack. After about 12 hours, turn all the leaves over
to dry thoroughly. Store in airtight containers.
