Orange Liqueur
3 navel oranges
3 cups vodka
1 1/2 cups superfine granulated sugar
Zest the rind off the oranges (i.e., only the
outer orange peel, no white) and blot inside paper towels to
remove excess oil. (Eat the oranges!) Put peel into a large
lidded jar and add 2 cups of the vodka; screw on the lid.
Store in a cool, dark place for 2 days or until the vodka
has absorbed the color (and the flavor, of course) of the
peel. Strain out the peel, add the sugar, and shake
vigorously until the sugar dissolves. Add the last cup of
vodka and stir until the liquid clears. Then reclose the jar
and store again for at least a week to age.
