1 cup lemon juice or vinegar
1 cup light salad oil
1 tbsp. toasted sesame oil
dash of hot chili oil
1/3 cup soy sauce
1/2 cup water
2 tbsps. dried minced garlic
2 tsps. powdered ginger
sesame seeds, if you like (crumbled feta is good in it
too)
Just put all this in a jar and shake. (After it sits
awhile, the garlic bits are potent but soft.) Adjust the
flavors as you prefer... Add more water for a lighter
dressing; a touch of honey could work in well; change it
from oriental to Italianate by adding herbs and
de-emphasizing the sesame, soy, and ginger, and using
balsamic vinegar. Want something heftier? - purée it in the
blender with some tofu. ...I’ve tried a jillion salad
dressings, and for my money, you can’t buy anything as
yummy as this!
