1 9-oz. can pitted black olives, rinsed
1-2 cloves garlic
1 small onion
2-3 tbsps. fresh parsley leaves
1/2 tsp. fresh thyme leaves or 1/4 tsp. dried thyme
1-2 tbsps. lemon zest
1 tsp. red wine vinegar
1/4 tsp. salt
dash of cayenne pepper to taste
1/3 cup olive oil
Coarsely chop the olives in a food processor, blend in
