1 2/3 cups whole unsalted shelled pistachios
1 cup sifted powdered sugar
1 cup flaked coconut
1/2 cup butter
1 egg
1/2 tsp. vanilla extract
2/3 cup sifted cake flour
1/2 tsp. baking soda
1/4 tsp. salt
Chop pistachios and half the sugar together in a food
processor until crumbly. Cream the remaining sugar with the
butter, egg, and vanilla. Add in flour, soda, and salt, then
mix in the coconut and the nut mixture to form a dough. Drip
onto a lightly greased baking sheet and bake at 35o degrees
for 10-12 minutes (soft-crisp).
