Prune Rye Bread
(an unusual and very tasty
rye bread recipe)
1 1/4 cups dried prunes, de-pitted and chopped
6 tsps. baking powder
2 cups rye flour
3 cups wheat flour
1/2 tsp. salt
1/2 cup honey
1 egg
1 3/4 cups milk
Cook the prunes in a little bit of water to soften them
(you can scissor them into bits first or chop them up when
they’re softened). Sift together the dry ingredients. Beat
the egg into the milk and honey and add this mixture to the
dry. Gently stir in the prunes last. Pour the batter into 2
small or one large greased loaf pan/s. Bake at 350 degrees
for one hour.
