Radish Relish

3 cups small radishes
2 large stalks of celery
1 large red onion
2 tsps. salt
1 cup sugar
1 tbsp. mustard seed
2 tbsps. dill seed
1/4 tsp. celery seed
1 cup apple cider vinegar
Finely chop the vegetables (a food processor is nice!)
and mix them with the rest of the ingredients in a large
saucepan. Allow to stand for 3 hours, then bring the mixture
to a boil and cook for 5 minutes. Pour into sterilized
half-pint jars, leaving1/2" space at the tops. Process
in a boiling water bath for 30 minutes.
