1 1/2 cups brown sugar
1/2 cup oil
2/3 cup water
1 cup buttermilk
1 egg, beaten
1 tsp. vanilla extract
21/2 cups whole wheat flour
1/2 tsp. salt
1 tsp. baking soda
1 1/2 cups finely chopped fresh rhubarb
1/2 cup chopped nuts
Beat together the sugar, oil, water, buttermilk, egg, and
vanilla. Add the flour, salt, and soda and mix all together
thoroughly. Stir in the rhubarb and nuts. Pour the batter
into 2 greased bread pans of about 8x4x2". Bake at 325
degrees for about 1 hour until bread is golden and well-set.
