2 lbs. fresh red-orange rose hips
6 cups boiling water
3/4 cup sugar
Wash the hips and remove the stems. Chop them coarsely
and put them into a saucepan. Cover the hips with the
boiling water and boil for 2 minutes, then strain the solids
out. If the result is more than 1 1/2 cups of liquid, boil
it down to that. Add the sugar and boil for another 5
minutes, then bottle. This is very high in vitamin C!
Give it to a sick child; stir it into tea, or a smoothie, or
hot milk at bedtime; mix it in with an oil and vinegar salad
dressing; stir it into your oatmeal; try it on custard or
ice cream!
