Rose Petal Wine
(rose wine - fit for a royal
wedding toast)
1 gallon water (eventually)
3 qts. strongly scented organically-grown rose petals
3 lbs. sugar
1 oz. yeast
juice of 2 lemons
(This assumes you know something about making wine...)
Bring1/2 gallon of the water to a boil and pour it over
the fresh, morning-picked petals in a fermenting vessel.
Cover well and leave it for 48 hours; stir often over those
2 days. Boil1/2 of the sugar in another quart of the water
for 2 minutes; allow to cool. Add to the petal mixture and
ferment for another 3 days. Strain well (squeeze the petals
out) and return the liquid to the vessel to ferment for
another 10 days. Pour liquor into a gallon jar, leaving as
much of the sludge behind as possible. Boil the rest of the
sugar and water for 2 minutes as before; when cool, add it
to the petal liquor with the lemon juice. Cover well (or fit
fermentation lock) and leave until all fermentation has
ceased. ...Then it’s wine!
