1 lemon, de-seeded and chopped (including the rind)
1 minced garlic clove
5 cups firm green tomatoes, chopped
2 1/4 cups brown sugar
1 1/2 cup golden raisins
1/4 cup finely chopped fresh ginger root (or 3 oz.
chopped crystallized ginger)
11/2 tsps. salt
1/4 tsp. powdered cayenne pepper
2 cups apple cider vinegar
2 red peppers, de-seeded and chopped
Combine all ingredients and simmer, stirring frequently,
for 2 hours or more, until the sauce has thickened. Ladle
the very hot chutney into sterilized pint jars and seal.
Process in a boiling water bath for 15 minutes.
