1/2 onion, minced
2 cloves pressed garlic
2 tbsps. olive oil
2 6-oz. cans tomato paste
1 tsp. salt
1/2 tsp. sugar
1 tbsp. dried parsley flakes
pepper, basil, and oregano to taste
Saute the onions and garlic in the oil until softened.
Add remaining ingredients and cook on medium-low heat for
about 10 minutes. Spray 1-2 baking sheets with non-stick
cooking spray - spread the mixture out as thinly and evenly
as possible. Dry in the oven at 140 degrees for about 6
hours with the door just open (or cover with mesh and dry
where it’s quite warm). Roll up the resultant leather in
plastic wrap and store in a sealed plastic bag. (Sure, it
can be a snack - but it’s great for camping...
reconstitute into tomato sauce by adding 3 times as much
water.
